Instructions
  1. Wash and chop the coriander leaves.
  2. Wash, cut and remove the seed of the avocado. Cube the flesh or scoop it out with a spoon into a bowl.
  3. Add salt, chopped coriander and a generous squeeze of lemon to this and set aside
Tempering
  1. The unique flavours to the dish are provided by the tempering.
  2. Into a small wok, add a tsp of oil followed by mustard seeds and set on gentle heat.
  3. As the splutter add the urad dal and broken bits of the chillies.
  4. When the dal turns golden add in the curry leaves to crackle and the cumin powder and remove from heat.
  5. Add this into the prepared bowl of avocados. amd mix well… its ready to serve with bread, chips or papodams

The lemon is added in the beginning so that the avocadoes do not turn brown.
