Steamed mango muffins
Easy to make muffins
for the muffins
for the topping
  1. Set water at the bottom of the steamer and then place a steaming rack or idly mould plate in a slightly raised manner in the steamer.
  2. Grease the bowl and place muffin liners in it. Silicone moulds work the best, but I did not have any.
  3. Set the steamer on medium heat and let the water begin to boil. Keep it on a low heat and covered till the batter is ready.
  4. Into the mixing bowl add the sugar, eggs, oil and whisk till homogenous.
  5. Add the mango puree and cardamom powder to the wet mix and mix gently.
  6. Now, sift in the flour with baking soda and baking powder.
  7. Mix gently and pour the batter into the prepared muffin moulds.
  8. Cover the muffin moulds with some foil to avoid water to condense on the muffin
  9. Place the muffin moulds with the bowl on the steamer rack and bring up the heat to medium.
  10. Cover and steam for 20 minutes or till the skewer comes out clean.
  11. Let it stand for another 10 minutes before unmoulding.
  12. To unmould run a knife along the edges and flip he muffins out.
  13. Serve these muffins straight away or topped wih icecream

steamed muffin

This is the texture of the steamed muffins when they are unmoulded. They are really soft. they do not stick to the muffin liner when perfectly cooled. Mine are still warm hence they are lightly stuck to the liner.
