Ingredients
4-6bajra rotis
1tbspcooking oil
1/2tspmustard seeds
1/2tspcumin seeds
1pinchAsafoetida
10curry leaves
1mediumred onion
1/4cuppeanuts
1green chillichopped
1/2tspunrefined sugarI have used a palm jaggery
salt to taste
1/4tspturmeric powder
1/2tspred chilli powder
For garnish
2tablespoon Tomatochopped
1tablespooncoriander leaveschopped.
Instructions
Shred the rotis and set them aside
Chop the onions and green chillies and set them aside.
Into the frying pan add the mustard seeds, asafoetida and cumin seeds ( jeera).
Let them roast on medium heat till the mustard crackles.
Add the chopped onions, curry leaves, green chillies and peanuts and saute well.
Add the salt, turmeric powder and red chilli powder.
Add the shredded rotis and the sugar.
Saute well till the spices are well mixed and it is all warmed through.
Garnish with fresh chopped tomato and coriander leaves,
Notes
Instead of adding the tomato at the end, you can add it with the onions and let it soften. We prefer the fresh flavour of the tomatoes and hence keep it to the end.
