Roasted tomatoes with garlic basil dressing

Ingredients
  

  • 4 tomatoes ripe
  • 5-6 garlic cloves
  • 2-3 tsp olive oil (swap with a high boiling point cooking oil if you like.)
  • salt to taste
  • 1 tsp black pepper powder
  • fresh herbs

Instructions
 

  • Preheat the Oven to 230 degree celsius.
  • Grate the garlic cloves and add it into olive oil. Add in the Salt and pepper and mix well. Add a handful of chopped herbs into the mixture.
  • Wash and cut the tomatoes into half.
  • Brush the tomatoes with the olive oil mix.
  • Place the tomatoes in a muffin tin or in an ovenproof dish which it can fit snugly.
  • Bake till the tomatoes are soft and bubbling. It takes about 30 minutes.
  • Serve warm with a bowl of pesto spaghetti or rice.

Notes

Use firm skinned tomatoes so they can hold up shape while baking.
