Ingredients

(swap with a high boiling point cooking oil if you like.)
salt to taste

black pepper powder
fresh herbs
Instructions
Preheat the Oven to 230 degree celsius.
Grate the garlic cloves and add it into olive oil. Add in the Salt and pepper and mix well. Add a handful of chopped herbs into the mixture.
Wash and cut the tomatoes into half.
Brush the tomatoes with the olive oil mix.
Place the tomatoes in a muffin tin or in an ovenproof dish which it can fit snugly.
Bake till the tomatoes are soft and bubbling. It takes about 30 minutes.
Serve warm with a bowl of pesto spaghetti or rice.
Notes
Use firm skinned tomatoes so they can hold up shape while baking.
