Ingredients
10- 15okraladies finger
1sprigcurry leaves
1/4tspturmeric powder
3tspcoconut oil
salt to taste
Instructions
Wash the lady’s fingers and pat dry well. let it stay open for about 10 minutes
Slice it to i cm long small pieces and set aside.
Select a heavy bottomed pan, grease the pan well with a bit of the oil and set to heat up.
Add in the a tsp of oil followed by one third of the okra sliced. stir well so the oil coats the okra now repeat with the second portion and then the third.
Sprinkle salt, add the curry leaves and leave it open for about two minutes in the heat.
Add the turmeric powder and stir gently .
On a slow heat let the okra roast gently. Toss at 5 minute intervals so as not to mush up the okra.
Towards the end of 15 minutes cover the pan for two minutes..just so that they steam well. make sure the okra doesn't burn

Notes
Tips to a non slimy version
Choose fresh and tender okra. Ensure its tender by snapping off the tapered end.
Never refrigerate the okra , it turns more slimy.
Slice the okra into 1 cm pieces, do not slice too thin.
Choose a heavy bottomed cast iron or nonstick pan.
Ensure uniform spread of oil to coat the okra, the the overall oil needed can be reduced.
