Dragon eye longan tea

Dragon eye longan tea with Oolong.

Ingredients
  

For oolong tea

  • 1 tsp oolong tea leaves (I have used light oolong)
  • 2 cups drinking water

for the longan infusion

  • 10-12 fresh longan ( peeled)

Instructions
 

To brew the oolong

  • Bring the two cups of water to a rolling boil.
  • Take it off the heat and rest it for two minutes for the temperature to come down a bit.
  • Add the oolong leaves you have chosen to the tea pot and add 1 cup of the boiled water,
  • Wait for two minutes, set a timer if needed.
  • Extract the brew and add the second cup of water for a deeper steep

for the longan infusion

  • To the warm tea, add the peeled fresh longan and allow to stand for 20 minutes.
  • serve warmed or chilled with the longan.

Notes

If using dried Longan, add it to the tea pot so that it can infuse in the hot water itself and leave it longer for the flavour to release.
Add honey if you are particular .... oolong is a very gentle tea.
