Cocoa nibs and lime bliss ball.

Ingredients
  

  • 1/4 cup sunflower seeds
  • 1/4 cup cashewnuts
  • 1/4 cup almonds
  • 1/8 cup dessicated coconut
  • 1/8 cup milk powder ( optional, omit for the dairy free option)
  • 1/8 cup cocoa nibs
  • 10 soft Dates ( soft variety)
  • 1 tsp lime zest
  • 3-4 drops lime juice

Instructions
 

  • Dry roast the almonds, cashew nuts and the sunflower seeds on a gentle heat (stovetop) or very low temperature for about 20 minutes in the oven.
  • Cool them and blitz them in the processor till they are a coarse mix, Add the cocoa nibs, milk powder, and lime zest and blitz further.
  • Remove a tbsp of coconut from the 1/8 cup and add the rest to the processor.
  • Add the lime zest, pitted dates and lime juice and blitz till they come together.
  • Make small balls of this mix and roll in the dessicated coconut.
  • Save in an airtight container and have as a snack

Notes

Alternately, you can press them into a square basking dish line with parchment paper and chill. cut them into squares after about half an hour and save in airtight boxes.
If you choose to make them just with one type of nuts or seeds that works well too. I do the recipe just with sunflower seeds and pumpkin seeds for my children for school as nuts are an allergen.
