Japanese style soba noodle with scallion sauce

A must try Japanese delicacy!!

Ingredients
  

For the noodles

  • 1 pack Soba noodle
  • 1 litre Water

For the sauce

  • 1 tbsp ginger finely grated root ( preferable old ginger root)
  • 3 tbsp Scallion finely chopped
  • 1 tbsp olive oil neutral oil
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce light
  • Toasted sesame seeds garnish

Instructions
 

  • Set a mixing bowl for the sauce.Into a mixing bowl add the rice vinegar, light soy sauce, the grated ginger and the scallions.
  • Drizzle in the oil and whisk all for the dressing. Set this dressing aside. You can keep it overnight  in the refrigerator too.It just marinates the flavors more.
  • Set a pot to boil water.
  • When the water comes to a boil, drop in the soba noodles and boil it for approximately 3 minutes.( check the package for instructions).
  • Drain the noodles and rinse under running filtered water.
  • Add the noodles to the prepared sauce and toss well.
  • Add in a tsp of sesame seeds and toss again.
  • Serve the bundles of noodles with an extra sprinkle of toasted sesame seeds.
