Japanese style soba noodle with scallion sauce

For the noodles
- 1 pack Soba noodle
- 1 litre Water
For the sauce
- 1 tbsp ginger finely grated root ( preferable old ginger root)
- 3 tbsp Scallion finely chopped
- 1 tbsp olive oil neutral oil
- 1 tbsp rice vinegar
- 1 tbsp soy sauce light
- Toasted sesame seeds garnish
Set a mixing bowl for the sauce.Into a mixing bowl add the rice vinegar, light soy sauce, the grated ginger and the scallions.
Drizzle in the oil and whisk all for the dressing. Set this dressing aside. You can keep it overnight in the refrigerator too.It just marinates the flavors more.
Set a pot to boil water.
When the water comes to a boil, drop in the soba noodles and boil it for approximately 3 minutes.( check the package for instructions).
Drain the noodles and rinse under running filtered water.
Add the noodles to the prepared sauce and toss well.
Add in a tsp of sesame seeds and toss again.
Serve the bundles of noodles with an extra sprinkle of toasted sesame seeds.
