Shredded lettuce salad
A refreshing simple salad of lettuce and sweet peppers with a yogurt herb dressing is perfect for summer, barbeques or the oen to add to a homemade burger.

- 1 cup sweet pepprs jullianned.
- 3 cups lettuce ( icerberg or Romaine)
For the dressing
- 1/2 cup low fat yogurt
- 1 tbsp olive oil
- 1 tbsp Lemon juice
- 1/4 tsp lemon zest
- salt to taste
- 1/2 tsp mixed herbs (dried)
- 1/2 tsp paprika (or Kashmiri chilli powder)
Into the mixing bowl add the ingredients for the dressing.
Whisk together till it forms a creamy smooth paste.
Add the shredded lettuce, thinly sliced sweet peppers into the mixing bowl.
Toss the salad well to coat the dressing on the salad veggies.
Serve the salad immediately.
