For the vadai
- 3/4 cup black gram Whole, with skin.
- 1 cup drinking water
Flavourants
- 1 medium green chilli chopped
- 1 tsp fresh ginger root minced or ground
- 10 curry leaves
- 1 pinch Asafoetida
- salt to taste
Soak the black gram dal for 4 hours or more.
After the black gram is plump, drain and set aside.
Add the salt, chilli, asafoetida, ginger and curry leaves.
Grind to a smooth paste.
Heat the oil.
Shape the batter into a doughnut and gently drop it into the hot oil right away.
Fry till golden on both sides.
Drain and serve warm.
