Equipment

Ingredients
  

For the vadai

  • 3/4 cup black gram Whole, with skin.
  • 1 cup drinking water

Flavourants

  • 1 medium green chilli chopped
  • 1 tsp fresh ginger root minced or ground
  • 10 curry leaves
  • 1 pinch Asafoetida
  • salt to taste

Instructions
 

  • Soak the black gram dal for 4 hours or more.
  • After the black gram is plump, drain and set aside.
  • Add the salt, chilli, asafoetida, ginger and curry leaves.
  • Grind to a smooth paste.
  • Heat the oil.
  • Shape the batter into a doughnut and gently drop it into the hot oil right away.
  • Fry till golden on both sides.
  • Drain and serve warm.
