Bakery style funfetti cake

Ingredients
  

Wet ingredients

  • 1/2 cup vegetable oil
  • 1.25 cups full cream milk / plant based milks
  • 1/2 cup yogurt greek or natural
  • 2 large egg
  • 1 tsp vanila extract
  • 2 cups unrefined sugar

Dry ingredients

  • 2.5 cups whole wheat flour
  • 3 tsp baking powder
  • 1 tsp salt
  • 3 tbsp funfetti ( sugar sprinkles)

For frosting

  • 1 cup double cream
  • 2 tbsp icing sugar
  • 3 tbsp funfetti (sugar sprinkles)

Instructions
 

  • Preheat the oven to 350°F.
  • In a large mixing bowl, combine the sugar, vegetable oil, milk,eggs, salt and vanilla extract.
  • Next mix in the yogurt and beat until well combined.
  • Sift together, the whole wheat flour the baking powder and the baking soda. sift twice for better airiness
  • Add the dry ingredients to the wet and fold gently
  • Sprinkle the funfetti and fold gently
  • Pour the batter in a 9-inch by 13-inch pan and bake at 350°F for 28-32 minutes
  • Test the cake if done by inserting a toothpick into the center of the cake. If it comes out clean, the cake is done.
  • Remove from the oven and allow to cool completely.

To frost

  • Meanwhike whip the double cream with icing sugar till they are soft and form gentle peaks    
  • Place the cake on a turn table and dollop.The whipped mixture liberally at the center. Spread outwards in circular pattern.Cover up the sides and sprinkle with the funfetti.    
  • Decorate with more that you like. Enjoy your cake.

Notes

Chill the cake overnight if in hotter climates.
