Ingredients
Vegetables needed

garlic

red onion
peeled and chopped

carrots
peeled and chopped

stalks
celery
chopped
Liquids and oils needed

butter
any vegan butter works well.

vegetable stock
1
cup
coconut milk
thinned out.
Spices
1/2
tsp
garam masala powder
Garnish

tbsp
celery leaves
chopped
Instructions
Wash peel and chop all the vegetables, mince the garlic and set aside.
Heat up the casserole and add the butter.
now add the chopped onion, garlic and bay leaf.
Saute till the onion turns translucent, then add the celery and saute well.
Follow this with the carrot and mix well.
Now add the vegetable stock.
Mix well, cobve and cook for 10 minutes.
Blend the vegetables using an immersion blender.
Now add the coconut milk and garam masala.
Adjust the salt and let the soup simmer for a few minutes.
Add pepper if prefered and the chopped celery leaves.
Mix and serve warm.
