With the El Nin0, it is kind of mixed weather here in Australia. Hot hot hot summer days and equally cold pouring days!! It is kind of like the weather cannot make up its mind! Oh well, nature too has one of those. As for me, the weather decides what to cook. For these summer rain days and a bit of holiday care needed, I don’t want to slog at the stove all day.
Here is an easy curried carrot and celery soup that solves the problem and vibes with the weather.
What makes this curried carrot soup recipe click?
Curried soups are slightly different from the regular soup recipes that you may be used to. Yet again there are two varieties of curried soups, the Indian one with a bit of heat and spices and the coconut milk, lemongrass-infused one, the Asian style. This curried carrot soup is done in the Indian style with a touch of masalas to help through the climate. Yet it is not a curry.
What do you need to make this carrot celery soup?
As the name suggests the main ingredients will be carrots and celery. with a few other ingredients this soup makes a delicious creamy portion.
Carrots are one of my favourite root vegetables is carrot. In fact, colourful carrots often make their way in as salad and stir-fries into our diet. The beautiful orange colour of this soup is all thanks to the carrots. Feel free to choose the colour of carrot you love and the soup changes colour accordingly.
Celery is a wonderful stem vegetable. In fact, the flavours lean towards a bit salty with an alkaline feel to them. Highly beneficial in joint health, celery reduces pain in the joints during winter months (tried and tested). Homegrown celery tastes less strong than the storebought ones. The leaves of celery are totally edible too so feel free to add them into this soup as well. Here are a couple of other recipes with celery that may come in handy. Celery leaf paratha and celery kootu curry, both done in Indian style.
Vegetable Stock adds a bit of nutritional add and flavour than plain water to this recipe.
Coconut milk the curry flavour with the spices is the one that rings the whole soup together. it also adds the necessary creaminess to the soup.
Garam masala and other spices
Herbs –You can totally add a bit of herb to add freshness here like the coriander leaves. I have chosen to use chopped tender celery leaves to heighten the celery flavour.
Curried carrot and celery soup
- Cutting board
- 3 cloves garlic minced
- 1 small red onion peeled and chopped
- 4 medium carrots peeled and chopped
- 2 stalks celery chopped
Liquids and oils needed
- 1 tbsp butter any vegan butter works well.
- 3 cups vegetable stock
- 1 cup coconut milk thinned out.
- 1/2 tsp garam masala powder
- 1 tbsp celery leaves chopped
- Wash peel and chop all the vegetables, mince the garlic and set aside.
- Heat up the casserole and add the butter.
- now add the chopped onion, garlic and bay leaf.
- Saute till the onion turns translucent, then add the celery and saute well.
- Follow this with the carrot and mix well.
- Now add the vegetable stock.
- Mix well, cobve and cook for 10 minutes.
- Blend the vegetables using an immersion blender.
- Now add the coconut milk and garam masala.
- Adjust the salt and let the soup simmer for a few minutes.
- Add pepper if prefered and the chopped celery leaves.
- Mix and serve warm.
