Spinach avocado soup

Enjoy this 5-minute cold soup that is perfect for those hunger pangs.

Equipment

  • blender

Ingredients
  

  • 1 medium avocado
  • 2 handful Spinach baby spinach tastes better.
  • 1 medium cucumber
  • 1-2 cups coconut water
  • 1-2 tbsp lmon juice

Finishing touches

  • 1/4 tsp chilli flakes
  • 1/8 tsp chia seeds
  • crushed black pepper

Instructions
 

  • Slice and scoop the avocado flesh into the blender.
  • Add the spinach, salt, lemon juice and 1 cup of the coconut water.
  • Make a smooth paste.
  • Remove from the blender and mix with more coconut water to make a soup consistency.
  • Scoop the soup into bowls.
  • Sprinkle, black pepper, chilli flakes and chia seeds on top of the soup.
  • If not using immediately keep chilled.
