Tricolour salad

Put together an effortlessly simple layered salad with orange spinach and feta for this Indian Independence day celebrations. Keep up the spirit with this citrus tricolour salad.

- 1 cup Spinach use salad grade baby spinach leaves.
- 1 large orange use navel orange
- 100 grams feta cheese
for the dressing
- 1/2 orange juiced
- 1/4 tsp yellow mustard
- 1/8 tsp dried mint
- 1/4 tsp honey
- crushed black pepper
- salt to taste
Wash and spin dry the spinach leaves.
Wash and peel the orange.
slice the orange and remove seeds.
Crumble the feta and set it aside.
On the salad plate, spread the spinach leaves.
Place the oranges in the centre.
Sprinkle the feta around the orange slices.
Whisk together, the orange juice,dried mint, salt and pepper to form the dressing.
Pour the dressing over the salad.
The salad is now ready.
