A vibrant pink of creamy tasty beetroot and carrot soup is comfortable on its own. Best the blue with the brightly coloured, easy, vegetarian blended soup.
As we are working towards getting the younger people in the house vaccinated there are a few blue days post-vaccine that needs nourishing easily to digest meals. Nothing beats blended soup in this category.
Why is this beetroot and carrot soup exciting
The blended soup is perfect as a main course. It is filling and hearty. Paired with white bean cranberry salad or a cheese toastie the soup warms up a not so great day. With good fibre and nourishing carbs from the root vegetables, this easy, stovetop recipe makes a weeknight with no energy better as a cozy hug.
Make some extra so you can take a Thermos of this blended soup to work as lunch too.
Beetroot and carrot soup
- 2 medium beetroot
- 2 large carrot
- 2 bayleaves
- 1 cup drinking water
- 3 cup vegetable stock
- 1/4 tsp dry thyme
- 1/2 tsp crushed black pepper
- 4-5 Rice cracker
- 1 teaspoon cream cheese
- WAsh and peel the carrot and beetroot.
- Dice them into big chunks.
- Add these into the instant pot or pressure cooker.
- Add 2 bay leaves, thyme, 1 cup of water, 2 cup of vegetable stock and pressure cook ( high pressure ) for a 12 minutes.
- Once the pressure is released, remove the bayleaves.
- Blend the soup till smooth.
- Adjust the salt and add the crushed pepper.
- Taste test and serve warm.
Variations to this blended soup
There plenty of root veggies that pair well with beets. I have used carrots, you can use parsnips or sweet potatoes. We have made this soup with beets and cauliflower once and it was equally good. It is one of the best hiding places for a lot of veggies if you are looking to sneak in some for the fussy eaters who like beetroot.
How to get rid of beet stains from your hands
Ahh, the worst part of beets (snd the best) is the bleed of pink. There are a few effective ways you can get rid of the stain so you don’t look like a slayer. There are a few tricks I use to get the beet stain off my fingers.
Rub with a piece of potato – use potato as a scrubber as it works wonders removing the beet stain. Dip the potato in a bit of salt if the stain is stubborn.
Use lemon water- if you have a few minutes extra soak the hands in lemon water with a pinch of baking soda. Then you don’t have to do much rubbing to get the stain off.
