Chilled soups are my favourites between tackling the sweltering heatwave and keeping the preparedness for the bushfire precautions. May it be the watermelon gazpacho or the quick no-cook tomato soup, I can get them all tucked in easily. At the same time, I crave chilled desserts. Many a time,  we would have icecreams, slushies and more.
Towards the weekend, we all do crave a bit of adulting, isn’t it? One that you can just serve at your next barbecue gathering? This champagne honeydew melon soup fits that dessert dream to the “T”.

Certainty such an eyecatching dessert is not going to escape the children. At the same time, you don’t need the champagne in it for them. Here is what adds to the bubbly sweetness, the vanilla soda. Yes!! that is the super hack that makes it look and feel its best.
With no added sugars or sweetness all the sweetness comes from the honeydew melon, you could stir in a bit of honey or maple syrup to make it sweeter if you like.

Champagne honeydew melon chilled soup

Ingredients
  

  • 2 cup honeymelon ripe, diced and frozen.
  • 2 tbsp avocado
  • 1 cups champagne
  • 1 tbsp lime juice
  • 1 sprig mint leaves

Garnishes

  • mint leaves
  • 1 tsp dessicated coconut

Instructions
 

  • Wash and peel the honeydew melon.
  • Scoop out the seeds, and dice the flesh into one inch cubes ( approximately 2 cups)
  • Place the cubes on a trya and freeze them.
  • Into the bowl of the food processor, fix the metal chopping blade, add the honey melon cubes and process for 1 minute till they are crushed.
  • With the processor running add in the champagne or Vanila soda, the avocado , the mint leaves, the lime juice and process further till smooth.
  • Stop and scrape down the sides intermittently to get even smooth soup.
  • Pour out the processed soup into serving bowls and top with the coconut and mint leaves.
  • Serve the soup chilled.

Oh this looks delicious and refreshing. I wouldn’t want cream with mine just a little mint. I shall be giving this a try when we have some champagne.
