Rainy days call for board games, some painting and a ton of books. If you have books you should have munchies. A few of these days extend as gloomy skies for extended days. That’s really when the books need to be reread and board games become boring.
To pep up these days the magical black pepper tea alone is not enough. So we resort to some more wider variety of snacks. Then come the pakodas and most of the deep fried elements. This school holidays we had heavy rains which pretty much kept us off the road. The repeated gloom in the sky left us more hungry than ever. That’s when the beautiful Indore street style kopra patties decided to swap places with the much wanted Alu Tikki (plain potato patties)
The cuisine of Madhya Pradesh
The down to earth foodie inspiration from the heart of Madhya Pradesh is a well-known fact. The first thing that races to the mind is poha- jalebi.
The seeping in history Malwa plateau has acquired its cuisine from the passing traders. Being a pretty large state the influences of the nearby state cuisines are very evident and contribute to the huge variety of delicacies found in this region.
Start with the poha in the morning and go all the way up to midnight through the streets of this foodie haven. I bet you can’t find a better spot to try varieties and cuisine samples from all the neighbouring states being just in this one place.
My partner for the Shhh cooking challenge this time was Priya Sateesh and she picked out two humble looking ingredients potato and coconut. Initially, poha raced through my mind and I was quite confident. Soon I was researching and realised the Indore style poha doesn’t have both these together. So the extensive read began. I found an online newspaper article about the kopra patties. Sounded good and saved it for the rainy day. The prep began with the Indori Jeervan Masala which really attracted me. So here is my version dusted with the flavourful masala.
To deep fry or not
While making these “inspired” Indori patties, what bothered me was the oil residue which is going to hang around. With the rain outside, I was not too sure if I wanted the oil fumes..so we baked some and we pan roasted some. The pan roasted ones were outright delicious. The baked ones a bit like baked potatoes. But once the masala was sprinkled and dunked in the green chutney all was good.

Street food from Madhya Pradesh
For the dough
- 2 cup potato boiled and mashed
- 1 tbsp oat flour
- 1/4 tsp jeervan masala
- salt to taste
for the stuffing
- 1/4 cup grated coconut
- 1 tsp almond flakes or cashew nuts
- 1 tsp golden raisins
- 1 tsp coriander leaves chopped
- a pinch of salt
- 1/4 tsp Lemon juice
- 2 tbsp cooking oil
for garnish and serving
- 1 tsp jeervan masala
- 1 cup green chutney
- To make the dough, boil and peel the potatoes.
- Mash the potatoes, oat flour, jeervan masala and a pinch of salt and mix well.
- Knead this to form a soft dough and set aside
- Mix the ingredients for stuffing and keep ready
- Make small balls of the potato dough and make a small depression in the centre
- Make a cup shape and fill a tsp or a bit more of the filling in this depression.
- Seal the potato dough ball and flatten gently.
- Prepare all the patties the same way and set aside
- Brush oil on a flat pan and bring up to medium heat
- place the prepared patties and roast them gently on both sides till golden
- Serve hot with green chutney and a sprinkle of Jeervan masala
You can avoid the jeervan masala totally if you are not fond of it. Vary the nuts and seeds as per your preference.
