Ingredients to make chocolate apple cake
This is a 5 ingredient that predominantly relies on basic baking supplies.
Wet ingredients: the basic mix is apples, eggs and cocoa. The apples provide the juicy moistness when they bake and the eggs the rise. For the cocoa you can used Dutch processed to reduce the bitterness. However, it is not essential. You can even use melted chocolate to add to the mix. When doing so, increase the flour content by an extra table spoon. A pinch of salt brings out better sweetness from the apples. Don’t miss to add it.
Dry ingredients: I have used self raising whole wheat flour to make this recipe. You can use whole wheat flour with baking soda and baking powder to make the same.
Finishing touches: once the cake is put and cooled you can easily lift it off the pan. Then you can choose to dust it with cinnamon powder, cocoa powder or icing sugar. We have chosen icing sugar this time for that snowy topping.
Let’s make sheetpan apple cake.
Prep the sheet pan: since we are baking this in a sheet pan, it is essential to prep it a bit. Ensure that you have the sheet pan with atleast a centimeter tall sides. Spray and line the sheet with baking paper(parchment paper). Dust the sheet with a bit of flour too for easy release of the cake.
Preheat the oven: the oven is set at 180 degrees in a pre-calibrated oven. Let it preheat for 10 minutes.
Blend the ingredients : peel and dice the apples. Add this into the blender. Add the cracked eggs too. Blend this into a smooth paste. Remove the mix into a mixing bowl.
Mix in the cocoa: sift the cocoa and salt into the mix. Fold and whisk well till they are combined and a bit aerated.
Fold in the flour: now sift in the flour and mix it well.
Batter ready: once the batter is mixed pour evenly on the sheet pan. Spread it a bit and tap. It helps to release any air bubbles.
Baking: bake this at 180 degrees for 15 minutes. Check if the centre is baked well using a skewer. If the inserted skewer comes out clean the cake is ready. Remove from the oven and cool.
Dust the icing sugar: once cooled, sift the icing sugar or cocoa powder like a layer of snow on top.

Which apples are the best for baking?
Since you are blending you don’t really need to worry about the apple type in this recipe. However, if you like to add in some chopped slices, then Honeygold, Fuji or granny Smith apples are better. I do find that Fuji has a bit more juice, hence adjust the flour quantities so your final bake is moist and baked well.
What if my apples are not sweet?
Based on your taste buds you can add sugar to the wet mix. I will not recommend beyond 1/2 cup of sugar. For me, this defeats the purpose of having a sugarless option of chocolate cake , so even of the apple is not so sweet we are happy with it. (It takes a while to adjust).
Can I make this as an eggless cake?
Though I haven’t tried, I am sure you can try this as an egg less cake. Use flax seeds eggs or an egg replaced to try. Aquafaba doesn’t work to give the rise in this recipe.
Isn’t vanilla or coffee needed for this recipe?
Not really. Coffee is often used to elevate the flavor of chocolate. However here we have the apple flavor to take over. This is the same reason I have not added any vanilla.
Can we frost this apple chocolate cake?
That would be an absolute yes. Though we have done a simple dusting of icing sugar, you can have a thick layer of frosting that makes this cake even better.Salted caramel butter cream or chocolate ganache will be rich and decadent.
Mealprep and storage
These apples chocolate cakes are so meal prep friendly. The cake stays well for a week when refrigerated ( well we just need to hope it does as my kids seem to think I bake just for the day and this sheet cake finishes so fast!!) Store in an airtight container. I am sure this will freeze well in a freezer safe box. Thaw overnight in refrigerator and then zapp it in the microwave for a warm bite.
