Make yourself a batch of crunchy, nutty honey granola without a huge effort.This batch will be that sweet breakfast you crave as you head out to brave the day and tempt you with the fragrance of lavender to have the breakfast time to yourself.
Our recent trip to the gorgeous Barossa Valley was not all about the grapes but also the lavender blooms. When we visited the Lyndoch lavender farm, the bees were so hard at work collecting and processing the golden nectar. The little gift shop also had the last two bottles of sweet smelling lavender honey. This bottle of honey was so fragrant with a lingering lavender flavour. So we had to try them for cookies and to make this batch of honey granola.

Ingredients to make honey granola
Oats: oats is a great grain and the base of any granola. What you need to add is rolled oats and not the precooked or quick cooking variety.these are not great as they are preprocessed also you can’t make granola with steel cut as that is too firm to bite. So, rolled oats it is, classic unflavoured variety will be good
Nuts and seeds: I love adding a good amount of nuts and seeds to the granola. You can use any. I have chosen almonds, chia seeds and sunflower seeds for this recipes. You can use flax seeds, melon seeds, pumpkin seeds, walnuts, cashews, peanuts, pecans etc too.
Honey: the golden nectar is not just a sweet treat but one of the better beneficial sugars. The honey adds flavor and fragrance to the batch of granola you make. I have used lavender honey for this batch. You can use any type that you prefer as that doesn’t very much alter the recipe, however alters the flavour of the resultant batch of honey granola.
Egg white: this is the secret ingredient that make the crispiest granola clusters. Don’t worry it doesn’t taste eggy at all. The egg white helps to clump the oats without making it soggy. Save the yolk to add to blender choco muffins.
Let’s make honey granola
Once you get a hang of it granola mix is delightfully simple to make and perfect for meal prep cold winter mornings.
Making the granola mix: Whisk together honey and egg whites. To this mix add the rolled oats and mix well.
Baking: Preheat the oven at 180 degrees for 10 minutes. Place the mix on a baking tray as a thin layer. Place the tray in the preheated oven and bake at 180 degrees for 20 minutes.
Cooling and clusters: Once cooled use a spatula and separate out the clusters. Turning this over and checking if the underside is baked evenly. Bake for another 10 minutes. Cool completely and store in an airtight jar.

Ingredients
- 3 cups oats rolled oats.
- 2 tbsp chia seeds
- 1/4 cup sunflower seeds
- 1 cup almonds
- 1 cup honey
- 2 medium egg white
Instructions
- Preheat the oven at 180 degrees for 10 minutes
- Into the mixing dish add the egg whites and honey and whisk well together.
- Add the oats into the mix and coat the oats well with the honey egg mix.
- Add the almonds, sunflower seeds and chia seeds.and mix well.
- Line the baking tray with parchment paper.
- Place the oats mix as a thin layer on the baking tray.
- Bake for 20 minutes till the top is golden.
- Cool and flip the mix over to expose the clusters.
- Bake again for another 10 minutes.
- Remove from the oven and cool.
- Store in an airtight container to use.
Do I need lavender honey to make honey granola?
Not at all! I love the lavender fragrance and happened to buy lavender honey. Hence lavender honey granola is my batch. You can make it with any honey variety you have. You can use just any type, however I do find flowery fragrances appealing to me better in the morning. You could try wildflower honey or citrus honey too.
How to get clusters in granola?
The egg white that we added helps to clump the granola without making it soggy. Though you mixthe eggwhite in it will not assure you any clusters, so here is the second part of the trick. Once you have the with mix done and mixed well set it to bake. While baking do not mix or stir the granola around. Wait till it cools completely. Then break up the clumps. Flip over and bake for another 10 minutes on the other side.
Why does my granola burn on the sides while the centre is not ready?
I do not have a reasonable explanation for this happening, but it does. Basically if you push the granola to the sides of the tray leaving a gap in the centre it browns more evenly. this way you are creating heat penetration space in the center as well.
Storing the granola
The lavender honey granola is a bit sticky when it is warm so allow it to cool completely. Once cool break the clumps and storage in an airtight container in your breakfast area. Use a dry scoop to extract some or shake it out like we have in our reels.
How to serve granola?
Straight up into the bowl: the classic good way of yogurt or milk with a scoop of granola certainly gives the best crunch factor. This can be breakfast, dessert or snack. You can add fresh berries or seasonal fruits to the mix to make it wholesome.
As a parfait: If you fancy a better breakfast enjoy the granola layered with stewed mulberries and yogurt. This is so pretty to look at and makes any morning happy.
Roll up some fruit: roll up some melon chunks ,banana bites and apple slices for the crunch factor in granola. I love these as snacks. On the other hand you can make a fruit salad and top it with granola
As granola cookies:as your granola jar gets a bit lighter,bake a batch of granola cookies for snacks. These vanish so fast at our house without a doubt.

At times do yourself a favour and stop making hot breakfast. Get a bowl and sit down with your people for a morning chat before you all run out if the door. Making a batch of honey granola certainly gets you time to achieve this in the week.
