Among the gravy recipes I am not so fond of the ones that top the list are recipesade with yogurt as the base. Hence I tend to make them a bit lesser. However, my family really likes a lot of these. As an attempt to make life easier in the kitchenware the younger ones are learning, I decided to get some on the blog.

and then wanted to have one where there was no chickpea flour used. That’s when we unearthed a new love for vrat ki khadi or rajgira khadi.
What is rajgira?
Rajgira or amaranth seed is a gluten free, protein rich, pseudo cereal.popular in traditional Azetac recipes,this is used during fasting in India. The seeds come in a variety of colors ranging from yellow to black. Commercially you will find the yellow seeds and flour more common. The seed and flour are consumed alike made as porridge, bread or soup. The whole seed when cooked has a bubble like texture with a crunch. We have used the whole seed to make Rajgira Kheer.
What is khadi?
Khadi is a yogurt based, quick curry. Usually thickened with a flour like chickpea or grains, the curry has a tangy creamy nature. It is usually milder than most classic curries. Often, fritters and a tempering of spices is added to it. In today’s version we have used amaranth for to thicken the khadi.

Why is this vrat ki khadi?
During the Indian fasting periods( especially navrathri,) a lot of grains and beans are avoided..commonly wheat, rice, chickpeas, onion, garlic are avoided from being consumed.instead, samo millet, amaranth seeds, water chestnut, potatoes,tapioca pearls are usually consumed. Since this khadi is onion garlic free and thickened with rajgira flour it is used as a fasting recipe.
Is this recipe gluten free?
Yes, as long as you are using gluten free asafoetida, the recipe is gluten free. The thickener is amaranth flour which is naturally gluten free. The spices and the yogurt too are friendly to the gluten free diet.
Can I make this recipe vegan?
Though the original recipe is not vegan,you can make the vrat ki khadi recipe as vegan. To achieve this swap the yogurt to peanut yogurt. Usually find the peanut yogurt thicker,if that is so add a bit more water to the mix. Test of the ingredients and process does not change.

- mixing bowls and spoons.
- saucepan
Ingredients
- 1 cup yogurt
- 2 cups drinking water
- salt to taste
- 1 tbsp amaranth flour ( rajgira atta)
- 1 tbsp peanuts crushed
- 1 tsp oil
- 1/2 tsp cumin seeds
- 2 small chillies yogurt cured.
Instructions
- Whisk together the yogurt, amaranth flour and water.
- Set the pan on medium heat and add the oil to heat up.
- As the oil heats up, add the cumin seeds and cured chillies to crackle.
- Add the yogurt mixture and keep stirring.
- As the mixture bubble and thickens, add the crushed peanuts and coriander leaves.
- Let this mix bubble and simmer.
- Remove from heat and sprinkle the salt.
- Mix well and kadhi is ready to serve.
