Christmas is usually the year end time for many. Here, it is the long holidays for kids and two weeks off work for office. This is when I get bustling busy and go on peak time mode. Moreover, it is hot, humid and summer during Christmas in the southern hemisphere. It is not the time to crank up the oven and add to the heat by baking away. So we crave, no cook desserts. What’s better than with iconic timtam cookies?
What is timtam?
Timtam is of Australia’s favorite cookies. Basically, it is two malted biscuits sandwiched with chocolate and dipped in chocolate. Made first in 1964 these are still made in Australia. Made at the rate if 3000 timtams a minute, these are great as gifts and for a timtam slam. Now, you have so many variations of this timtam and also a national timtam day!

Ingredients to make timtam cheese cake balls
This is practically a two ingredient recipe. It practically takes 15 minutes if you exclude the chilling time.
Cream cheese: The soft non-matured cheese made with milk and cream is used in this recipe. You can use home made ones or store bought varieties. Low fat cream cheese works ell in this recipe too. However, it is not a good idea to substitute with cottage cheese or mascapone as these have more water content.

Let’s make this cheesecake balls
This is an absolute easy recipe that still needs a bit of thought and prep. So, though it is recipe under 15 minutes it is going to take some chilling time.
- Prep the timtam: the timtams need to be crushed into a coarse mix. You can use a mortar and pestle, food processor or a coffee grinder to make this coarse mix. Set this aside.
- Fluff the cream cheese. Ensure that the cream cheese has come to room temperature. Whisk and fluff the cheese till it becomes lighter and airy.
- Make the dough: set aside 3 to 4 tablespoons of the crushed timtams. Add the rest of the crushed timtams in to the cream cheese. Fold well.
- Chill and roll: cover the mixing bowl with a lid or cling film and refrigerate the mix for an hour or two. When chilled the mix is not so sticky and easy to roll. After the time, roll the dough into small 1 inch balls.
- Finish the cheesecake balls: roll the balls of cheese cake mix in the crushed timtams to coat them. Alternatively you can dip them in melted chocolate. And chill till needed. The timtam cheesecake balls are ready to eat.
What other cookies can I use to make this dessert?
Practically any flavour of biscuit you like can be made into a cheesecake with this recipe I have made this recipe with oreos, orange cream cookies, biscoff and chocolate cookies. The biscuits I will avoid are digestives, Marie or arrowroot ones. This si because they wont add the necessary sweetness to the final dessert. You could also try cranberry cookies or raspberry swirls to make your own variations.
Meal prep and storage
The timtam cheesecake stays good for a week in fridge, well if it lasts! Store in airtight fridge safe glass container with a tight lid.

No cook Timtam cheesecke balls
For this festive season, try out this no cook timtam cheesecake balls that comes together with just two ingredients and is nutfree.
Equipment
- food processor
- mixing bowls and spoons.
Ingredients
- 1 pack timtam biscuit 200 grams
- 250 grams cream cheese
Instructions
- Blend the timtams biscuit into a coarse powder.
- Into the mixing bowl add the cheese cake that has come to room temperature.
- Whisk this well to aerate and fluff the cheese
- Set aside a couple of tablespoons of the timtam powder and then add the rest to the cream cheese.
- Fold this well
- Refrigerate for a couple of hours.
- After refrigerating, roll the mix into small balls.
- Roll the prepared balls in the timtam powder that set aside.
- The cheesecake balls are now ready.
