What is Diwali without a chaat! Among the diwali traditions, I learnt from friends is to play a few games and feel festive with a chaat.this sounds like fun in the evening. So we quickly adapted it. Since it is chaat and games none complains. During our last India visit,my brother in law introduced us to boti masala chaat. This is a Bengaluru twist to a crunchy fried snack. Oh boy! It does hit all the right notes. It is
salty
peppy
crunchy
has the right amount of salad vs crunch ratio.
Once we were back, we made boti masala on repeat. I am sure you will love this recipe too.
What is boti?
Boti is a form of extruded, deep fried snack. The base recipe is wheat flour, corn flour , baking powder and salt with some edible colour added to it. This dried form is deep fried or airfield to make a crunchy snack. My kids used to love slipping their fingers through them and then eat them up. Boti is often confused with animal innards which is also called by the same name. Probably this snack got its name as it looks similar to animal intestines.

Ingredients for boti masala chaat
Boti: the tubular fryums is what we have used in this recipe. After deep frying we have slices them for the ease of filling it with the salad. Alternatively,you can fill the whole tube with the salad. You can use smaller or bigger tunes or any other shape you have.
For the salad: unlike most of the chaat salads you will come across, Bengaluru chaats have a lot of carrot and at times beetroot in them. This was because of the ease of procuring fresh ones in the locality. Other than these, tomato, onion, cucumbers, coriander (or mint) chillies and lemon that make it tasty.
Spices and seasoning: For this chaat to come alive, we used chaat masala, aamchur powder ( dried mango powder), roasted cumin powder and chilli powder along with salt. You can use a bit more or less of these spice mixes based on your tastebuds.
Peanuts: the crunch of congress kadelekayi (spiced peanuts) make the best in all of Bengaluru chaat. I’d you don’t have these you can use regular toasted peanuts. If not peanuts, try crushed almonds, pistachios, pepitas or melon seeds for the crunch.
Sev: a final sprinkle of nylon sev makes any chaat complete. Sev is a deep fried snack made with chickpeas You can use store bought one or the easy sev recipe (click here ).
Cooking oil:any neutral cooking oil that you use for crunchy stuff is perfect for this recipe as well. I have used sunflower oil.
Let’s make boti masala
Deep fry the boti: once you set the oil to heat up on medium, Deep fry the boti pieces. Drain them and set it aside. If making ahead store in airtight boxes.
Make the salad: Grate the carrot, chop the onions, tomatoes and add them to a mixing bowl. Sprinkle salt, add chopped coriander leaves, green chillies, salt, lemon, and chaat masala. Mix well and set it aside till needed. Put the chaat together: Slice the fried boti into half. Place them on a plate and top with salad. Add the groundnuts and sprinkle the sev on top.

What can we substitute for boti?
Boti being a hot chips version of s fryums, any variety of fryums is great with this recipe. You can use finger rings, wheels or triangles. We dont often get this boti fryums around here hence, we make this chaat with sago papad or Arisikaruvadam.
Bengaluru is an interesting city that comes up with these unique creations. This is probably because the population being one from different parts of India, each bringing their uniqueness to the place. This means Bengaluru style chaats are a variety by itself. Boti Masala Chaat is an interesting recipe that I have come across. It instantly took me back to childhood memories of slipping those tubular fryums onto our fingers and waving them around in fun. But never could I thick of making such a chaat with it. The topping of onions, beetroot, carrot and spices gives an interesting dimension to it. Will have to try out this creation.

We called these pipes Ponga Pundit, don’t ask me why? These used to be the horrible witch fingers we chewed on. 😀 I love this boti chaat it sounds delicious, and what I should look out for in Bangalore. Wait, I may get these pipes here in Goa too. Let me check this, the season is perfect for some fried chaat recipes.
In Gujarati boti is called bhungra, meaning pipe. What a wonderful idea. How come I’ve missed this in Bangalore? No worries, can now make it at home following your recipe.
I have seen boti chat being made in street cart in Bangalore but dint have the guts to taste it. Now I am going to use your recipe to enjoy the famous boti chaat
