Indian fusion ladoo cheesecake

Ok, this is what happens when you are down under. You always run the opposite weather to practically all your counterparts. Then, you end up with a hot and sizzling Christmas and then a blazing New year’s with a total fireban. This practically throws out all the ideas of cookies, loads of cakes and replaces it with just salads, puddings, barbequed foods and just a lot of ice creams that I can think of. This time around there are a couple of  bring a plate  events. For the first one our Timtam cheese cake recipe was a huge success.  Further, I wanted to do some Indian inspired food, that was easy with almost no cooking involved Kind of an Indian fusion dessert. Guess what we came up with?  Ladoo cheesecake cups.

This idea came from the same lines as the Timtam cheese cake and the popular Diwali favorite, Mothichoor ladoo kheer. Since both these recipes were trending, the ladoo cheesecake idea just seemed to click.

What is a ladoo cheesecake?

This is a brilliant Indian fusionrecipe combining store bought ladoos (or home made)with a cheesecake cream. Layered into a cup this becomes one of the best cheesecake cake ideas in a cup. Here are some of the reasons you will love this.

  • This is a no bake recipe, so don’t sweat.
  • You don’t need any cooking skills to put this together.
  • It comes together in under 15 minutes.
  • Stays well in the fridge for a week (well  if it lasts)
  • It encompasses all the Indian flavours you are looking for and balances it perfectly.
  • It can be made for any festive occasion or get-togethers

Nobake ladoo cheesecake

Ingredients  to make ladoo cheese cake

Ladoo cheesecake ingredients are easily assembles s most of them are storebought.

Cream cheese: the base of this no bake, cream cheese mix is of course,  the best cream cheese you can source. You can use the full fat variety or the lighter version. I have used the popular Philadelphia cream cheese.

Cream: the cream cheese can be very thick and heavy when whipped on its own. Addition of cream helps to bring out the airiness in this mix and helping it to lighten.

Sugar: powdered sugar is added to the cream cheese to bring out a better sweetness in this dessert. You dont need a lot as the the ladoos are already sweet.

Ladoo:Store bought ladoos are used in this recipe. You can use boondi ladoos or mothi choor ladoos or a combination of both like we have done.

Nuts and seeds: it is optional, but you can add a mix of crushed almonds, cashews etc as a layer or mixed with the ladoo to add a textural difference in this recipe.

Let’s make ladoo cheesecake.

The ladoo cheesecake is assembled fairly quickly after the first step of whipping the cheese. This is the only time consuming process in this whole recipe. From start to finish the recipe should take approximately 15 to 20 minutes to assemble and then an hour to chill.

Whipping the cream cheese: Bring the cream cheese to room temperature. Then add a few tablespoons of cream, the powdered sugar and whip the mix till fluffy. Now, transfer the mixx into piping bags and set it aside.

Crush the ladoo:Remove the ladoos from the packaging and crush them to form a crumble mix. toss them well and keep ready.

Assemble the cheesecake cups: Arrange small dessert cups in a tray. Add about a centimeter height of the crushed ladoo. Pipe in the cream cheese mix. Follow this up with alternate layers of ladoo mix and the cheesecake cream till it almost reaches the top of the cup. Top it up with nuts and seeds or another dollop of cream.

Chill and serve: Cover each cup with clingwrap or foil and refrigerate till serving time. The wrap prevents the top from drying.

Ingredients
  

  • 250 grams cream cheese
  • 3 tablespoons heavy cream
  • 2 tablespoons powdered sugar
  • 8-10 mothichoor ladoo

Instructions
 

  • Whip together powdered sugar, cream cheese and cream.
  • Add it into the piping bag.
  • Crush the ladoo.
  • Add a layer to the base of the cups.
  • Pipe in a layer of cream cheese.
  • Follow this up in alternate layers till the top.
  • Top it with nuts and seeds if you like.

Can I make these as a big cake to slice?

Absolutely. Though I make them as easy to hand around cups, the recipe is suitable for making it into a full cake. Follow the step by step instructions below to achieve the cake.

  • Layer your round tin with cling wrap to help you unmould easily.
  • Now press down a layer of crushed ladoo.
  • Top it with the whipped cheese mix.
  • Even out this layer, tap down the pan.
  • Place another layer of ladoo,followed by the cream cheese.
  • Continue layering till you reach the top of the cake tin.
  • Then slice the ladoos in half and place face down to decorate .
  • Add crushed nuts to cover the surface.
  • Chill this for 2 to e hours and you can unmould the cake.
  • Transfer it carefully on to a base.
  • Now slice and serve.
