Refreshing mango lemonade

I am sure I have Thursdayitis. I am not sure if that is a thing, but surely if we can have Mondayitis,  Thursdayitis should not be far away! I believe it is the day when most of my meal prep is reduced and I know the weekend is still a bit far which causes this feeling. I don’t really have a solution to this, so the one thing I do is keep cooking minimal this day. Of late the one thing I am loving to have when I come back from work is a mango lemonade. It is seriously refreshing and feels like it gets a bit of that Thursdayitis out. Do you have something like this that helps you through the tough day?

Ingredients to make mango lemonade

Mango pulp: it is not mango season here so I have resorted to adding, frozen mango pulp. If you have fresh mangoes, use that to blend and add. The pulp I have used is of Kesar mango.

Lemon: fresh Meyer lemon is what I like. These are the larger sweeter lemons. You could make this with limes too. They taste equally good.

Sweetener: a lemonade is not complete without sweetness. A part of the sweetness comes from the mango pulp used. The rest can be sugar, stevia, rock candy or jaggery.

Water: thin out your lemonade to drinking consistency using water. You can swap this for sparkling or soda water.

Let’s make mango lemonade

It can’t get any simpler than this. Into the blender add the mango pulp, lemon juice, water and sweetener of choice and blend till they are well combined.

Variation

Chilli dips: the glass rim with paprika and then pour the lemonade. This is an absolute kicker you can’t miss. Alternatively,  you can blend a piece of jalapeno with the mango pulp and then add it to the lemonade to make mango chilli lemonade.

Mint: some muddled mint at the bottom of the glass is really refreshing. Try some.

Berries: you can always add some crushed berries like raspberry or strawberry to the glass or even better drop a couple of them into the blender while making the lemonade.

Fizzy: use sparkling water to make your lemonade. It will be the perfect one for a barbecue gathering or a summer picnic

Equipment

  • blender

Ingredients
  

  • 3/4 cup mango pulp
  • 1 large lemon
  • sweetener I have used sugar.
  • 1.5 cups drinking water chilled

Instructions
 

  • Add the mango pulp, lemon juice, water and sweetener into the blender.
  • Blend smooth till all the juices are mixed well.
  • Pour into tall glasses to serve or keep chilled till serving time.
