Tandoori cabbage steak

Grilled tandoori cabbage steaks.
As a vegetarian attending a barbeque, it is pretty guaranteed that your plate will be salad and a piece of grilled corn. If it is an Indian inspired one you will get some tandoori paneer. It does get a bit repetitive and a bit boring, however, the barbeque days are all about he sun, the people and all that laughter. I don’t like to miss out on that, so here is an idea that you can take to the grill and get some WOW’s too. As such this recipe is easily possible as long as you can put and manage something on a grill.  It is

What is a cabbage steak?

Cabbage steak is not meat! It is just a piece of cabbage grilled to perfection with flavours of your choice. it can be a main, a starter or a side depending on how you pair it. You can make this with regular type of cabbage or use the red or savoy cabbage ( the green one with crinkly leaves). The steak an be cut circular or into wedges to be grilled. the flavor choices are entirely up to you.

Ingredients to make grilled tandoori cabbage steak

Among the flavour profiles to put a cabbage on the grill I love the big bold ideas of a tandoori marinade. It creates an envelope of flavour encasing the sweet cabbage as it cooks on the grill. This contrast is unique to the tandoori cabbage steak.
Cabbage: Regular cabbage with tight swirls is best for this recipe. When you buy the cabbage press down and feel if it is firm and weighty, this means the core will be tight and the steak will not fall apart. If you feel the core is not so tight, cut the cabbage into wedges instead of steaks to make the recipe. You can use red ( purple ) cabbage or savoy to make this recipe as well. The same recipe works for broccoli and cauliflower steaks too. 
For the tandoori marinade: this is the key flavor factor.yogurt is the base and the acidifying agent. You can use greek yogurt or fresh culture yogurt. To this I have added tandoori masala ( store bought, I have used Shan), fennel seed powder. turmeric powder, coriander powder, garam masala powder, ginger powder and kasuri methi. Sprinkle the salt and then mix them well to have the marinade ready. 
For grilling: Since no oil is added to the marinade, ensure you coat the grill well with oil. Any cooking oil of your preference is good for this recipe. Before placing on the grill i prefer to spray a bit of oil on top of the cabbage steak as well to get the prefect glaze.

How to serve tandoori cabbage steaks?

Tandoori cabbage steaks can be very versatile as you can use the as starters, mains or sides. 
When we make it at a barbecue gathering, we make a good bean based salad with a lot of lemon to go with it like the blueberry kidney bean salad or the chickpea salad.
If making as a side, make it with veg sheek kebabs or grilled paneer, They complement each other well.
Dont forget that the classic green chutney and the khatta meeta ( sweet and sour) chutney goes so good with this.

Equipment

  • Grill.
  • mixing bowls and spoons.

Ingredients
  

  • 1 medium Cabbage red or green

For the tandoori marinade

  • 1 cup yogurt
  • 2 tbsp tandoori masala
  • 1 tsp garam masala
  • 1 tsp coriander powder
  • 1/2 tsp fennel powder
  • 1/2 tsp ginger powder
  • 1/2 tsp turmeric powder
  • salt to taste
  • 2 tbsp kasuri methi

For grilling

  • 2-3 tbsp cooking oil any high heat neutral oil.

Instructions
 

  • Prepare and keep the grill heated up.
  • Into a mixing bowl add the ingredients for tandoori paste.
  • Mix well and set aside
  • Clean and slice one inch thick slices from the whole cabbage head.
  • Coat the cabbage slices on both sides with the tandoori paste
  • Brush the hot grill with oil
  • Place the cabbage steak on it.
  • Spray a bit of oil on the top.
  • Cover and let this steam for about 7 minutes.
  • Open and grill till the charred top appears.
  • Carefully remove ( can fall apart easily) onto a serving plate.
  • Slice and enjoy with green chutney.

How to pack up the ingredients for an outdoor barbeque?

When planning to carry this for a outdoor grill event, It is best to pass a skewer through the cabbage steaks as this helps to keep them intact and easier to handle. If the set up is going to take a long while or you are driving for a few hours before putting this on the grill, carry the marinade separately as the cabbage tends to go limp on soaking for a long period of time.

Very tempting tandoori cabbage steak. Would love to have it with noodles at the side. This sure is an interesting way to use tandoori flavors in cabbage. Will try my hand at it this weekend.

I am in love with these Tandoori Cabbage steak . Perfect to snack on this low calorie version. We made this for evening snack and enjoyed it . My parents also loved it .
