Indian thalis are a esteemed platters representative of the cuisine. This can be as simple as a dal chawal home platter or an elaborate multicourse meal. We all have indulged atleast once in these platters. So this time inspired by the season we have a simple tricolour thali.
What goes in this tricolour thali?
Jeera rice: Jeera rice is a cumin infused rice thatt is mild in flavour and fragrant. Made with basmathi rice the fluffy rice is best accompanied with lentil rich curries. This is a perfect for the white component of the tricolour thali. I have used the recipe from sizzling tastebuds to make jeera rice. You could swap for a similar Kalonji rice from us too.
Palak paneer: the mild and creamy spinach curry with cottage cheese cubes is palak paneer. Palak is English spinach, popularly available in India and paneer is pressed cottage cheese. This is an under 20 minutes recipe. I don’t think you can get a greener Indian curry than this is the most natural way.
Railway aloo curry: since this is an easy to achieve with the tomato base flavour. The versatile potato offers comfort in every bite. Also though it appears a bit red it is more saffron in person. Here is the recipe to make this.

Roti: if you like a bit more to the platter add palak rotis. This will complement the curries well.
