Instructions
  1. In a wok add the oil followed by mustard seeds.
  2. When it splutters assessments the Channa and Urad Dal with chillies, shallot and curry leaves. Stir it around till the Dal goes golden.
    Urad dal and Mustard seeds in oil
  3. Now add the chopped amaranthus red.
  4. Sprinkle salt.
  5. Toss for a minute. Cover and keep it on a low flame for two minutes till it wilts.
  6. Add the grated coconut.

  7. Stir fry for another two minutes.

  8. Check the salt levels….enjoy warm

  9. You can substitute amaranthus ( green colored ) instead of red one and follow the same instructions.

Cheera thornan – stir fry amaranthus greens.

Amaranthus is a super power vegetable. This simple stir fry is a favourite in Kerala.
Included here I’d both versions of red and green amaranthus stirfry.

You need

One big bunch of washed, cleaned and chopped amaranthus leaves and tops.
The chopped volume is around 4cups when packed.
One tbsp of coconut oil (you can use any vegetable oil you are familiar with too)
Salt to taste
Half cup of grated coconut
Half tsp mustard seeds
Half tsp of Channa Dal
Half tsp of Urad Dal
One sprig of curry leaves
One crushed  shallot
Two  dry red chillies broken

Method

Now add the chopped greens. Sprinkle salt. Toss for a minute. Cover and keep it on a low flame for two minutes till it wilts.
Mix in the coconut and stir fry for another two minutes. Check the salt levels….enjoy warm.
